Launched in 2015, NextFerm is primarily focused on developing fermentation yeast for the food industry. The company's process can be applied to many areas, including ethanol production, to develop yeast that is better able to cope with temperature or pH changes, for example. Accordingly, the company is now developing a new strain of yeast for Mascoma for use in the ethanol industry.
